Aubergine has many names, brinjal, baingan and Im sure there are more. But call a rose by any name... Many people may not share my love for brinjals, nor find my poetic approach to it funny. But it's really such an amazing veggie. I called it aubergine roll here only for the fun of it, somehow brinjal rolls didn't sound appealing to me.
But this starter is really yummy, easy to prepare and scrumptious. The tangyness of the roasted and raw vegetables combination is offset beautifully by the mild creamy cheese...so there is a burst of flavors with every bite... hmmm... try it.
