Cut thin slices of brinjal
Soak in water with a bit of turmeric and salt for a couple of minutes
Heat 1 tsp oil in a flat pan on a medium flame and add the cumin seeds, half of all the spice powders and oregano
Mix it and spread around the pan
Add the slices of brinjal in a flat layer.
Sprinkle the balance powders, herb and salt over it
Cover and reduce flame to low.
Cook for approx 3-4 minutes, open cover and gently flip the slices over. Add more oil if required
Cook for another 3-4 minutes, till the slices are cooked.
Check to make sure it's evenly cooked. If the slices are very thin, it may cook faster.
Gently slide out the slices from the pan, to a flat serving dish and serve with a good creamy vegan cashew dip
