Neer dosa's are another fav in manglorean cuisine. Made with only rice, they are light..and lacy and yummy with chutney, roast or sukkha. Its the most easiest dosa recipe, but the techniques of making it requires some practice. And I usually make dosa's without any oil, but you cannot avoid it with this one. It either cracks or gets stuck to the pan.
My mom used to do this thing of cutting an onion into half, inserting a knife into the top side of one half of it to use as a handle. Then she would pour little oil into a bowl, dunk the cut side of the onion into it, and using the knife as a handle she would grease the pan with the onion...god this was a pain to explain. Anyways it works very well, uses a lot less oil and spreads it evenly
