This one is a take off from various fried meat dishes available in smaller non veg restaurants in the south. Typically, every version of chicken and meat dish fried with red or green chillies has been done and is popular. Paneer became a popular substitute for vegetarians, but it's a poor one as compared to tofu. The slightly grainy texture of tofu gives it a much better bite, and mushrooms add to the flavor... yumm. :) Here I have paired it with a quinoa sprouts salad, that perfectly offsets the spicyness of the chilly fry.
