In Mumbai, a spicy oily version of egg bhurjee is made by street food guys. One of the dishes my hubby missed quite a bit, so I tried replicating it...with pretty great results. So this one has a decent amount of oil, spicy masala powders and a bunch of veggies (all optional) to make up for all the unhealthy stuff that goes into the bhurjee. It's really quite delicious with pau. All optional ingredients are marked with stars. If you are using soyfit tofu, which is drier than silk and other brands, consider marinating it in the given optional marinade while you are preparing the veggies. Gives the tofu more flavor and moistness.
