Abstract
Dr. Caldwell Esselstyn has done significant work around the role of plant based diets on reducing cardiovascular risk. The results of an intensive 20 year nutritional study indicated dramatic reductions in cardiovascular risks amongst patients who had adopted his plant based diet. After 5 years on Dr. Esselstyn's plant-based diet, the average total cholesterol levels of his research group dropped from 246 mg/dl to 137 mg/dl (high risk to normal). The 17 patients in the study had suffered 49 cardiac events in the years leading upto the study, but not a single cardiac event in the group for a 12 year period post shifting diets.
